   It is recommended , if the addition of sugar is made, that one should limit added sugar intake to 2 tbsp a day. With no processed breads, yogurts, snacks, and sweetened drinks, one has a greater ability to take advantage of this sugar limit recommendation. Consideration not recommended when not embracing a whole food plant meals three times a day free of processed and animal based products. Can make only one serving resulting in no further temptation to eat more. One should focus on planning three balanced meals to incorporate vitamins and minerals from foods instead of supplements.

Fat free or low fat ( No fat from milk, butter and eggs)

Egg free( applesauce replacement. Trust me!)

Dairy free( Water or plant milk replacement. Doesn’t make a difference when unsweetened used).

contains gluten,so one is less likely to compromise the texture of baked goods.

 

   Can make only one serving resulting in no further temptation to eat more.   Acts as a satisfying snack or quick breakfast (rare circumstance) compared to one subway cookie that is 220 calories. Keep in mind these empty calorie refined treats are typically paired with a sandwich. This mug cake is perfect for those who shun all desserts that are labeled as healthy dessert alternative. This treat doesn’t have to be thought as a healthy alternative(if that makes you happy) because it doesn’t taste like one depending on one’s taste buds and perceptual set.

 

What makes this the healthier option?

   Spelt flour is a whole grain and it contains copper, magnesium, iron, zinc, phosphorus.Has a mild dominating flavor making it a better flour substitute than whole wheat (masked with sugar and other combinations of flavor ingredients).  I used 1.5 tbsp sugar and it was sweet enough with the chocolate chips. Do not omit coconut oil. Spelt is not a gluten free option.

Benefits:

  • No animal products
  • Stevia or monk sugar can be used 1 tsp for every 1 tbsp ( does not cause tooth decay, zero calories, and better for diabetics).( Monk sugar looks more like raw sugar compared to the white powder image of stevia).
  • Can use unrefined coconut sugar, monk sugar, or stevia as a sugar replacement ( same effect as regular sugar and should not be used regularly)

 

Chocolate Chip Cookie Mug Cake

  • 1/4 cup spelt flour, or all-purpose (readers have had success with Bob’s gluten-free)
  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1.5 tbsp coconut sugar or pure cane sugar ( Limit of added sugar is 2tbs a day, including sugar in processed foods)
  • pinch pure stevia, or 1 more tbsp sugar(can omit and still tastes sweet)
  • 1/4 cup applesauce( unsweetened natural without cinnamon)
  • 1 1/2 tbsp milk of choice+ 1tbs of apple cider vinegar or milk( unsweetened plant or water)
  • 1/2 tbsp coconut oil
  • 1/4 tsp pure vanilla extract
  • 2  tbsp chocolate chips  ( Replace with cinnamon and sugar for snicker doodle)

*I used 1/4 tsp baking soda and 1/2 tsp baking powder and it turned out more cake like instead of “fudgy” which just means underdone.

Instructions

To make the cake in a mug: If using an oven, preheat to 350F. In a small bowl, mix all dry ingredients. Now pour wet into dry, and stir until just evenly combined. Do not overmix spelt! Pour into greased ramekins, a little dish, or a mug. (Or two 1/2-cup ramekins.) If using the microwave, cook for 1 min 10 seconds (Microwave times will vary depending on wattage). Or cook this in the oven for around 14-15 minutes. Let cool before trying to pop out. Makes 2 small muffins or one jumbo muffin!

Fat free creates a more gummy texture.

Weight Watchers Points Plus: 4 points ( Veggies and most fruit are zero points).

Conclusion:

  1. Homemade- least processed animal product free option to satisfy sweet craving.
  2. Subway- better ingredients than publix
  3. Publix- Ingredients that can not be pronounced
